31 Jan 2014 - 恭喜恭喜 Day 1

Day 1 of Chinese New Year!
What is more important to me?
I felt that nothing is more important than a good health!
Without a good health, I cannot enjoy anything even if I have a lot of money!
I will not be happy also!
So I wished myself and everybody 身体建康!
 
 
Bought dresses from Zalora. With 20% plus 15% for the Chinese New Year dresses from Innercircle.
Quite nice. I found them short so I wore a longer dress.

Mum wanted to wear pants and blouse...
Hmm..told her that if she did not wear the dress that she bought, she will not wear it for normal occasion.

25 Jan 2014 - 吉Lapis

Ingredients:
1. Unsalted butter, 400gm
2. Condensed Milk, 4tbsp
3. Vanilla Flavour, 1tsp
4. Egg Yolk, 15
5. Fine Sugar, 80gm
6. Cake Flour, 70gm
7. Corn Flour, 20gm
8. Lapis Spice, 1/2 tsp
9. Ghee, 45gm
10. Egg White, 4
11. Fine Sugar, 80gm
12. Cream Tartar, 1/8 tsp

Steps:
1. Cream the butter and Ghee to cream texture, add in the milk and vanilla and mix well.
2. Whip up the egg yolk and sugar (80gm) to creamy texture.
3. Combine step 1 and 2 and mix to smooth texture.
4. Sift the flour, corn flour and lapis spice and add into the above mixture and mix well.
5. Whip up the egg white, cream tartar and sugar (80gm) to soft peak.
6. Add in the step 5 into the butter mixture and mix well.
7. Line the baking paper into a 7" x 7" cake tin.
8. Scoop 5 tablespoon of the mixture into the tin and spread evenly. (at home if no air con, place the bowl of batter on bowl of ice water)
9. Place in the oven and bake at 190 degree Celsius for 8 to 10 mins or until golden brown colour.
10. From 2nd layer onwards, use grill to bake evenly layer. (use fork to poke the layer once out from oven or when you see bubble)
11. Every 3 to 4 layer put the prune and cranberry on it.
12. Also brush butter on every 3 layers. ( skip this step to avoid oiliness)
13. Repeat the procedure until mixture has been used up. (Last layer, turn back to oven mode to bake for 10 to 15mins at 170 degree Celsius)
14. Take the cake and over turn on cool rack.

 We had our baking session at Phoon Huat
1st, we had to sparate the egg yolk from egg white. we had to break 60 of them.
Me and Ee Ping broke 30 each.
60 eggs for 4 of us at a table.

80 gm of fine sugar x 2 bowl


Cream the butter and Ghee to creamy texture, add in milk and vanilla and mix well.

Adding in all and mix well.




Must have strong arm for this!

5 Tablespoon of the mixture into the tin and spread evenly.
We have to repeat this fast and a lot of times!
